THTI Students in the Bar

Covering a wide range of subject areas, all geared toward the hospitality and tourism sectors, the Module (or short) courses are taught over one semester (15 weeks). Under our Step Up Facility , credits can later be transferred to the Certificate or Associate Degree programmes.

Accounting

Students are exposed to the concepts, terminologies and principles of accounting. They will also learn how to examine and evaluate financial statements. Participants will be required to work through the full accounting cycle.

Baking Technology

This module is designed to provide basic knowledge of cake and pastry making techniques, while developing practical competence. New patisserie skills are introduced, as well as the traditional cake and pastry specialties suitable to various food outlets.

Students are introduced to the methods and techniques utilised in planning, organising, promoting and successfully delivering major events.

Food & Beverage Service

Students are introduced to the psychology of service, as well as its technical skills. This course emphasizes theory, concepts and performance. The various types of services, equipment, furniture and implements used are also examined.

Food Preparation

This introductory course serves to familiarise students with the theory and practice related to kitchen operations. Participants in this course acquire knowledge of kitchen terminology, equipment use and the basic techniques of food preparation.

THTI Food PreparationInformation Technology

Students are exposed to a comprehensive technical and practical understanding of computer systems, peripherals and current software packages such as Microsoft Office. The primary objective of this course is to enable participants to access the power of computer technology in pursuing personal and business goals.

Introduction to Hospitality & Tourism

A review of the historical development of the tourism and hospitality industry is a part of this module. The growth, progress and trends in the industry are emphasized and linkages with the economy examined. Through interaction with practitioners within these industries, students will focus on the critical importance of human resources to the burgeoning tourism and hospitality sectors.

Introduction to Management

This introductory course provides a general survey of management, exploring basic concepts and principles. Attention will be focused on the basic functions of management and its importance to organisations.

THTI Languages

Languages

These courses aim to develop fundamental communication skills in the respective language by preparing students to converse and write competently in real-life situations. They also serve as solid foundation courses for continued studies in the language.

Marketing

This introductory course exposes the student to the basic principles and practices of marketing. Topics such as advertising media, customer market definition, the proverbial 4Ps of marketing and more will be explored. These concepts are discussed in light of their application to the tourism industry.

Quality Customer Care

Designed to sensitise students to the crucial role that quality customer service plays in the success of organisations, this module emphasises the importance of attitude and professionalism in delivering such service consistently. Strategies and techniques used to maintain and exceed customer expectations will be examined, demonstrating how to enhance customer value and build loyalty.

Sanitation, Hygiene & Safety

This course provides information on basic microbiology, safety, personal hygiene and the general handling of food. An understanding of how food contamination can occur and what sound practices are needed to prevent it is also taught. Additionally, local legislation for the food service industry is also examined.

Small Business Entrepreneurship

Exposure to the operations of small businesses is a primary objective of this course. It examines both the practical and theoretical essentials of starting a business, from the generation and evaluation of an idea to its successful implementation.

Tour Guiding

This course will assist participants in developing the skills and the techniques necessary to operate as professional and versatile Tour Guides.
