These one year full-time, two year part-time programmes include a semester long practical internship at a property or business located in Tobago, Trinidad or the wider Caribbean.

Baking & Pastry Arts
This diploma is designed to help students achieve a better understanding of advanced bread, cake and pastry making techniques. Methods of: preparation, production, decoration and presentation of the patisserie department, along with basic management theory are explored. Core Courses include: Chocolate work; Bread and Rolls; Pastry, Cakes and Cookies; Dessert Preparation; Safety, Sanitation and Hygiene and Cost Control.
Tour Guiding
With its practical exercises, this programme provides the training needed to become an effective, professional and knowledgeable tour guide manager. Students are exposed to: the process of tour product development, marketing strategies, guiding skills and techniques, a range of languages, customer care skills and professional delivery industry standards.
